Sacramento salmon was renowned in the Mother Lode region – until toxic waste from hydraulic mining started to pollute the pure mountain streams.
Salmon is one to the quickest and easiest protein sources to prepare, and its also healthy and delicious!
The dish was also on the menu at the celebratory dinner which finishes Poisoned Legacy – Chapter Fifty-Six.
Baked Salmon
Servings: 8
Ingredients
- 500 g (1 pound) salmon fillet
Instructions
- Preheat the oven to 425F (220C) Line a baking tray with aluminium foil or parchment paper.
- Unless they have been removed already, remove the pinbones from the salmon fillet with tweezers. If you run your fingers over the flesh they will immediately become apparent.
- Season the top of the salmon generously with salt. Add freshly ground black pepper to the salmon, to your taste.
- Place the fish on the lined tray, and bake for 12-14 minutes, until the top is no longer shiny and the fish registers between 125-140F (50 – 60C) in the middle, depending on desired doneness. 125F (50C) is for medium, and 140F (60C) is for fully cooked salmon.Serve and enjoy!
