Sesame Snaps

Ingredients
- 50 gm butter
- 1/2 cup soft brown sugar
- 1/4 cup sesame seeds
- 3 tblsp sesame seeds
- 1/3 cup flour
- 1/2 tsp ground cardamom or ginger
- 1 tsp sea salt flakes
Instructions
- Preheat oven to fan forcer 170 degrees C. Line 3 trays with baking paper
- In a small food processor or spice grinder process sugar and 1/4 cup of sesame seeds together
- Melt butter, sugar/sesame mixture and golden syrup together in a saucepan
- Let cool slightly then add extra sesame seeds, flour, spice and salt and mix together to tick paste.
- Roll into teaspoon sized balls and place on oven trays leaving a lot of room for spreading. Flatten slightly.
- Bake for 7 – 8 minutes or until golden and bubbly.
- Let the tuilles firm up slightly and then shape them into curls (draping over a rod or tubular shape helps)
- When firm let cook on rack and store in an airtight tin.
Notes
I made these and I skipped the step for curling them up like brandy snaps… I felt it was a little beyond my levels of patience and time available.. They still tasted wonderful!
